What is Sodium Diacetate?

Sodium diacetate is a 1:1 mixture of sodium acetate and acidic acetate which is commonly used as a preservative or a flavouring agent in food. It is also used to adjust the pH level in food. It is the salt of acetic acid and can also be called dry acetic acid because it is composed of free acidic acid in a solid form (39 to 41%).


Functions  :


It acts as a preservative to extend the food shelf life of meat and bread.

It can also be used as a flavouring agent to make savoury food day is different with a hint of vinegar.

Sodium diacetate can also be used as a solid source of free acidic acid to change the acidity of food.


Composition :


This white coloured hygroscopic crystalline solid is formed by mixing sodium acetate and acidic acetate in equal parts on a molar basis



Uses in Different Industries


Food

It is mostly used in bakery items, meat and savoury products. The fact that it is in a solid form would make it very safe and easy to use and transport unlike liquid acidic acid.


Bread

It is also used in baking bread as a preservative as it acts as a mould inhibitor in the dough of the bread to prolong the shelf life. We can also see synergistic anti-microbial effect with calcium propionate.


Meat

It is mostly use to lower the pH of meat products such as pork and beef to inhibit the growth of moulds and bacteria and prevent some major food borne pathogens. If it is combined with sodium lactate or potassium lactate, the microbial growth is more effective.


Savoury Products

It is considered and used as a dry vinegar because it has a high concentration of acidic acid. This makes it a flavouring agent and it can be added to products like cookies, chips, condiments, sources, soups, potato crisps and salads.


Acidity Adjustment

It also functions as a buffering agent in order to adjust the acidity of the food. It can either be applied in dry or liquid form.


Pharmaceutical 

Sodium diacetate regulates the pH level of the dialysis solution. Because of the solid form, it is used by clinics to help eliminate having to store a liquid product and instead only to dissolve the dry mix.


Is it edible?


It has been tested and approved by global food administration authorities such as the FDA, EFSA, joint FAO/WHO expert committee on food additives to name a few.

Manufacturing Process:


Generally, there are two manufacturing processes used that are mentioned from the authorities that is the FDA and EFSA.


According to FDA  21CFR18.1754, To determine the technical grade, one has to react sodium carbonate with acetic acid or anhydrous sodium acetate with acetic acid to manufacture a special grade.

The EFSA states that sodium hydroxide to be reacted with a calculated excess of glacial acetic acid which would leave a sufficient free acid after the production of sodium acetate.
